Sun-Dried Tomato Chicken Roll-Ups
Submitted by The Sensible Cook4 boneless, skinless chicken breast halves
1 egg
2 Tbsp water
1/2 cup seasoned bread crumbs
3/4 cup shredded part-skim mozzarella cheese
1/3 cup chopped oil-packed sun-dried tomatoes
2 strips turkey bacon, cut in half

Preheat oven to 400 degrees. Using the flat side of a mallet, flatten chicken out to ¼ inch thickness.
Mix the egg and water together in a shallow bowl and set aside. Place the bread crumbs in another shallow bowl. Mix together cheese and tomatoes in another bowl.
Dip chicken in egg mixture then dip into bread crumbs, coating both sides. Place some of the tomato mixture in the center of each chicken piece. Place a piece of bacon on top and roll up, jelly-roll style. Secure with a toothpick if needed and place it seam side down on a baking sheet that has been sprayed with cooking spray. Repeat steps with remaining chicken. Spray the tops of the chicken with cooking spray. Bake for 25 minutes or until juices run clear. Remove toothpicks before serving.
