16 cloves of garlic, peeled and lightly crushed
2 tsp fresh rosemary, minced
½ tsp salt
½ tsp pepper
¼ cup olive oil
1 large head cauliflower, washed, trimmed and cut into bite size pieces
Preheat oven to 450°. Mix oil, rosemary, salt, pepper and garlic together in a small bowl. Set aside.
Put cauliflower in a large bowl. Pour oil mixture evenly over the cauliflower and toss thoroughly to coat. Place in a large casserole dish in one layer. Bake for 20 minutes. Stir and bake an additional 10 minutes.
6 servings, each serving has 142 calories, 8g fat, 10g carbohydrate, 9g protein, 4g fiber
