Pumpkin Pie in a Cup Submitted by The Sensible Cook 1 ½ tsp pumpkin pie spice 1 pkg (4 serving size) fat free, sugar free vanilla pudding mix 1 pkg silken (not extra firm) tofu 4 Tbsp whipped topping Blend everything together with a mixer in a large bowl until smooth. Spoon into 4 serving cups and refrigerate at least 5 minutes. Top each with 1 Tbsp whipped topping just before serving. 4 servings, 115 calories per serving, 3 fat grams per serving
