Orange Cranberry Pumpkin Bread

Makes 2 Loaves

3 ½ cups flour (whole wheat bread flour or blend)

½ cup sugar

2 tsp baking soda

2 tsp pumpkin pie spice

¾ tsp salt

1 tsp baking powder

1 (16 oz) can whole-berry cranberry sauce

1 (16oz) can pumpkin (not pie filling)

½ cup apple sauce

8 egg whites or 1 cup liquid egg substitute

¼ cup chopped walnuts or pecans (optional)

1 Tbsp finely grated orange peel

 

Preheat oven to 350 degrees. Spray two loaf pans with cooking spray. In a large mixing bowl, combine flour, sugar, baking soda, pumpkin pie spice, salt, and baking powder.

 

In a second bowl, combine remaining ingredients, except nuts and orange peel, stirring until mixed well. Add pumpkin mixture to flour mixture and stir until combined. Pour batter into loaf pans. Sprinkle batter with nuts and orange peel. Bake for 60 minutes or until bread is done. Cool in pans 10 minutes then remove from pans to cooling racks.
