No-Bake Peanut Butter Balls

½ cup reduced-fat creamy peanut butter
2 Tbsp apple juice
1 tsp vanilla extract
1/8 tsp ground cinnamon
½ cup raisins or chopped dried cherries
1 whole low-fat graham cracker (the 4 little squares), crushed
½ cup cornflakes (not crushed)
1 Tbsp powdered sugar (optional)
In a large bowl, mix all ingredients except powdered sugar. Roll into 12 balls and place uncovered in the refrigerator for 1 hour. After they have chilled, roll each ball in powdered sugar to coat, if desired. Store in tightly covered container in refrigerator.
Makes 12 treats. Each one has 80 calories, 3 g fat, 11g carbohydrate, 2g protein, 1g fiber
