Monster Cookie Balls

2 cups oats
1 large apple, finely diced
3/4 cup raisins or currants
1 cup of reduced fat peanut butter
24 whole pecans
¼ cup light butter, melted
½ cup carob chips
4 egg whites
1 cup water
15 drops liquid stevia
*stevia is a calorie free sweetener found in health food stores
Combine oats, eggs, water, & butter in a large bowl. Stir in remaining ingredients expect pecans. Using ¼ cup scoop, place onto a cookie sheet that has been sprayed with cooking spray, and form it into a ball (the best you can, the batter is sticky…. Or you can use a 1/3 cup measuring cup to scoop out the batter). Place a pecan on top of each ball. Bake at 350 degrees for 10-12 minutes
Makes 24 cookies, serving size: 1 cookie, 176 calories per serving, 9 fat grams per serving
