1 cup flour

1 tsp baking powder

½ tsp salt

⅛ tsp baking soda

1 tsp dried rosemary

3 Tbsp cold butter

½ cup low-fat buttermilk

 

Preheat oven to 450°. In a bowl, stir together the flour, baking powder, salt, baking soda, and rosemary. Add the butter and cut it in using two butter knives, until the mixture is well combined and crumbly. Stir in the buttermilk, just until mixed. Add more buttermilk if it seems too dry.

 

Dust a work surface with flour and place dough in the middle. Roll out dough to ½ inch thick. Use a small 1 inch cookie cutter or the rim of a narrow glass to cut out the biscuits. Place on a baking sheet.  Bake for 10-12 minutes or until lightly browned.

 

15 mini-biscuits, each one has 54 calories, 2g fat, 7g carbohydrate, 1g protein, 0g fiber
