Minestrone Soup

3 cups water

2 teaspoons chicken bouillon granules

3/4 cup frozen sliced carrots

1 cup frozen cut green beans

1 cup stewed tomatoes, coarsely chopped & un-drained

3 -4 cloves garlic, minced

1 teaspoon Italian seasoning

2/3 cup uncooked pasta shells

1 (8 oz) can red kidney beans, drained

1 ¼ cups zucchini, diced

Salt, to taste

Pepper, to taste

 

In a large sauce pan, combine chicken bouillon, water, carrots, and green beans. Bring mixture to a boil. Stir in un-drained tomatoes, garlic, and Italian seasoning. Add pasta kidney beans, and zucchini. Stir well to combine. Reduce heat and simmer 10 to 15 minutes or until pasta shells and vegetables are tender. Add salt and pepper to taste

 

4 servings, each serving has 146 calories, 1 g fat, 30 g carbohydrate, 7 g protein, 6 g fiber
