Maple & Rice Pudding

1 (4 serving size) sugar-free, fat-free instant vanilla pudding mix
⅔ cup nonfat dry milk powder
1½ cups water
½ cup sugar-free maple pancake syrup
1½ cups cold cooked rice
¼ cup fat free whipped topping
2 Tbsp chopped pecans
In a medium bowl, combine pudding mix, milk powder, water, and syrup until well blended. Stir in rice. Spoon into 4 serving dishes. Refrigerate for at least 15 minutes. Just before serving, top with whipped topping and nuts.
4 servings, each serving has 196 calories, 2g fat, 34g carbohydrate, 9g protein, 1g fiber
