This cold side-dish salad is great for picnics or potlucks. The recipe is easy to double for bigger crowds.

 

1 box deluxe macaroni & cheese dinner (the kind with the sauce, not the powder)

½ cup fat free mayonnaise

¼ cup skim milk

2 stalks celery, finely chopped

½ red pepper, diced

2 hard boiled eggs, peeled & chopped

3 green onions, thinly sliced

 

Boil macaroni as directed on the package. Drain in a colander and rinse with cold water to cool off. Drain & set aside.

 

In a large bowl, whisk together the cheese sauce, milk, and mayonnaise. Add all remaining ingredients, including the drained macaroni and stir to combine. Chill until ready to serve.

 

8 servings, each serving has 357 calories, 12g fat, 47g carbohydrate, 15g protein, 2g fiber
