Start to finish time: 20 minutes.

2 boneless, skinless chicken breast halves, cut into thin strips

3 cloves garlic, minced

1 carrot, grated

Grated rind from 1 lemon

1 ¾ cups water

1 ¾ tsp chicken bouillon granules

1 Tbsp parsley

1 (4oz) can sliced black olives, drained

2 cups instant white rice

 

In a large skillet sprayed with cooking spray, cook chicken until no longer pink, adding the garlic during the last couple of minutes. Stir in remaining ingredients. Bring to a boil. Reduce heat to a simmer; cover for 5 minutes, or until rice is soft and liquid is absorbed.


4 servings, each serving has 299 calories, 5 g fat, 43 g carbohydrate, 17 g protein, 1 g fiber
