AVERAGE RATING: 5 votes / 5 Stars These colorful and fun little cookies are easy to make. 2/3 cup butter, softened 1/3 cup sugar 1/2 tsp baking powder 1 pkg (.3oz) sugar free raspberry gelatin mix (or other flavor) 1 egg white 1/2 tsp vanilla 1 3/4 cups flour Preheat oven to 400°. In medium mixing bowl, beat butter and sugar with a mixer until well blended. Mix in baking powder, gelatin, egg white, and vanilla. Gradually mix in flour until blended. Shape dough into 2 inch balls. Place on ungreased cookie sheet. Flatten slightly with the bottom of a glass. Bake for 10-12 minutes. Remove from cookie sheet to cooling racks to cool. 16 cookies, each cookie has 134 calories, 8g fat, 15g carbohydrate, 2g protein, 0g fiber
