Gorgonzola Potato Casserole

2 lbs potatoes, peeled and cut into ½” cubes
½ cup green onion, thinly sliced
2 Tbsp butter
1 tsp garlic powder
4 oz reduced fat cream cheese, cut into cubed
½ cup fat-free half & half
¾ tsp salt
¼ tsp pepper
1/3 cup gorgonzola cheese, crumbled
Cook potatoes in boiling water until tender, about 15 minutes. Drain. Preheat oven to 450°.
Sauté green onions in butter for 1 minute. Remove from heat.
Mash potatoes. Mix in green onions and butter, garlic powder, cream cheese, half & half, salt, and pepper. Fold in cheese.
Spray a 1 ½ quart casserole dish with cooking spray. Place potato mixture in the dish and bake for 15 minutes.
6 servings, each serving has 255 calories, 10g fat, 36g carbohydrate, 7g protein, 2g fiber
