Eskimo Pudding Pies
Submitted By The Sensible Cook 2 pkgs (4 serving size) instant sugar free chocolate pudding 3 1/3 cups skim milk ¼ cup reduced fat peanut butter 18 low fat graham crackers Mix pudding according to package directions, except use 3 1/3 cups of milk. Mix in peanut butter. Line a 9X13 pan with half of the graham crackers. Spread pudding mixture over the graham crackers. Top with remaining crackers. Freeze for 4 hours. Cut into 12 squares and remove from pan. Wrap individual servings in plastic wrap until ready to eat. 12 servings, 170 calories per serving, 3g fat, 30g carbohydrate, 6g protein, 2g fiber
