Eggnog Bread Pudding

2 cups light eggnog
½ cup sugar (or granular sugar substitute)
4 egg whites
1 tsp. Nutmeg
1 tsp. Vanilla
8 slices raisin bread, cubed
Preheat oven to 350°.Mix all ingredients except bread in a large bowl. Fold in bread cubes. Spray a 2 quart baking dish with non-stick cooking spray and pour mixture into prepared pan. Bake for 40-45 minutes or until a knife inserted in the middle comes out clean. Serve warm.
Topping ideas: go topless, syrup, milk, whipped topping, or ice cream.
