Clam Stuffed Mushrooms

12 large fresh mushrooms
1 can minced clams, drained
1/3 cup dry bread crumbs
¼ cup grated Parmesan cheese
½ small onion, diced
1 garlic clove, minced
1 Tbsp Italian seasoning
1 Tbsp dried parsley
1/8 tsp pepper
1/3 cup + 2 Tbsp butter, melted
¼ cup shredded part-skim mozzarella cheese
Preheat oven to 350 degrees. Wash mushrooms, remove stems and set caps aside.
In a large bowl combine clams, bread crumbs, Parmesan, onion, garlic, seasonings, and 1/3 cup melted butter. Fill the mushroom caps with this mixture and place on a baking sheet. Sprinkle with Mozzarella and drizzle with remaining butter. Bake uncovered for 20-25 minutes. Serve warm.
