Chocolate Chip Pudding Cookies

2 ¼ cups flour
1 tsp baking soda
1 cup butter, softened
2 Tbsp sugar
¾ cup packed brown sugar
1 tsp vanilla
1 (4 serving size) package instant sugar free vanilla pudding (you can use other flavors if you want)
2 eggs
1 (10 oz) package chocolate chips
½ - 1 cup chopped nuts (optional)
Preheat oven to 375 degrees°. In a large bowl, combine butter, sugars and pudding mix. Beat until smooth and creamy. Beat in eggs, vanilla, and baking soda. Gradually blend in the flour. Stir in chips and nuts.
Drop by spoonfuls on a non greased cookie sheet. Bake for 8-11 minutes. Remove to cookie rack to cool.
Makes 36 cookies, each cookie has 143 calories, 8g fat, 17g carbohydrate, 1g protein, 0g fiber
