1 cup sugar

1 1/2 Tbsp butter

1/4 tsp salt

1/3 cup fat free half & half

1 cup miniature marshmallows

1 cup white chocolate or vanilla chips

6 drops red food color (optional)

2 tsp cherry extract

1 cup chocolate chips

1/2 cup reduced fat peanut butter

1/2 cup salted peanuts (optional)

 

Line an 8 or 9" square pan with aluminum foil and spray with cooking spray. Set aside.

 

Combine sugar, butter, salt and half & half in saucepan. Boil over medium heat for 5 minutes, stirring occasionally. Stir in marshmallows, white chips, food coloring, and cherry extract. Stir constantly until melted. Pour into prepared pan. 

 

Melt chocolate with peanut butter in a small pan over med-low heat, stirring constantly. Remove from heat and stir in nuts. Carefully spread over the cherry layer. Let set in refrigerator until well chilled. Cut into small squares. Store covered in fridge.

 

Makes 20 squares, each piece with nuts has 229 calories, 11g fat, 31g carbohydrate, 4g protein, 2g fiber

Each piece without nuts has 208 calories, 9g fat, 30g carbohydrate, 2g protein, 2g fiber
