Cherry Bread

1 (10 oz) jar maraschino cherries
1/3 cup butter, softened
½ cup packed brown sugar
4 egg whites
2 tsp baking powder
½ tsp salt
1 cup mashed ripe banana
1 ¾ cups flour
1/3 cup chopped walnuts
Preheat oven to 350°. Drain maraschino cherries, reserving 2 tablespoons juice. Coarsely chop cherries and set aside.
Put butter, brown sugar, eggs, baking powder, salt and reserved cherry juice in a large mixing bowl. Mix with a mixer until well blended. Gradually blend in flour and the mashed bananas. Stir in cherries and nuts.
Lightly spray a loaf pan with non-stick cooking spray. Spread batter evenly in pan. Bake for 1 hour or until golden brown and wooden pick inserted near center comes out clean.
Remove from pan; let cool on wire rack. Wrap in plastic wrap or store in a tightly covered container.
Makes 1 loaf (8 slices), each slice has 313 calories, 11g fat, 49g carbohydrate, 6g protein, 2g fiber
