Cheesy Vegetable Soup

Note: A favorite vege soup... even the kids like it!
1 cup diced potatoes
½ cup diced carrots
½ cup diced celery
½ cup chopped onion
1 chicken bouillon cube
2 cups water
10 oz. Frozen mixed vegetables
10 oz. Frozen chopped broccoli
1 can cream of chicken soup
1 ½ cups water
4 oz. Light Velveeta cheese, cubed
Combine potatoes, carrots, celery, onion, and bouillon with 2 cups of water in a stockpot. Bring to a boil, and then reduce heat; simmer for 20 minutes. Add frozen mixed vegetables, frozen broccoli, chicken soup, and 1 ½ cups of water. Bring to a boil and stir in cheese.
