Carrot Bran Muffins

1½ cups flour
1 cup wheat bran
½ cup packed brown sugar
1½ tsp ground cinnamon
1¼ tsp baking powder
1½ tsp baking soda
½ tsp salt
4 egg whites
¾ cup reduced-fat buttermilk
½ cup applesauce
2 Tbsp molasses
1½ cups grated carrots
1 cup raisins
Preheat oven to 350°. In a large bowl, combine the first seven ingredients. In another bowl, combine the eggs, buttermilk, applesauce, and molasses. Stir into dry ingredients, just until moistened. Fold in carrots and raisins.
Spray a muffin tray with cooking spray or line with paper liners. Fill cup ¾ of the way full. Bake for 20-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack.
