Candied Christmas Cookies

3 Tbsp butter, softened
3 Tbsp brown sugar
2 Tbsp olive oil
1 egg yolk
½ tsp vanilla extract
1 cup flour
¼ tsp salt
9 red or green candied cherries
Preheat oven to 375°. In a small mixing bowl, beat butter and brown sugar until well blended. Beat in oil, egg yolk and vanilla. Combine flour and salt, then gradually add to the butter mixture and mix well.
Shape into 1” balls. Place 2 inches apart on ungreased baking sheets; flatten slightly. Bake for 5 minutes. Remove from the oven.
Using the end of a wooden spoon handle, carefully make an indentation in the center of each one (cookie edges will crack). Fill each with a candied cherry half. Bake 6-8 minutes longer or until edges are lightly browned. Remove to wire racks.
Makes 18 cookies, each cookie has 68 calories, 4g fat, 8g carbohydrate, 1g protein, 0g fiber
