Cabbage Casserole

Great served with kielbasa sausage!


1 small head of cabbage

2 carrots, shredded

2 cups water

1/2 cup chopped onion

1 can cream of celery soup

1/3 cup skim milk

3/4 cup shredded reduced-fat cheddar cheese

1 tsp dried parsley flakes

10 reduced-fat crackers Ritz, crumbled

 

Preheat oven to 350 degrees. Spray an 8 inch square baking dish with cooking spray.

 

 

In a large saucepan, combine carrots, cabbage, and water. Cook over medium heat until vegetables are tender, about 10 minutes. Drain.

 

Meanwhile, in a large skillet sprayed with cooking spray, sauté’ onion until tender. Stir in soup, milk, cheese, and parsley.  Stir until the cheese melts.  Stir in cabbage mixture. Pour into baking dish. Sprinkle cracker crumbs over top. Bake 30 minutes or until bubbly.

 

6 servings, each serving has 130 calories, 4g fat, 18g carbohydrate, 7g protein, 4g fiber
