Black Bean & Orzo Salad This is an easy side salad! 2 cans black beans, rinsed and drained 4 oz sliced black olives, drained 1 medium tomato, chopped ¼ cup green onions, chopped ¼ cup cilantro, chopped 2 Tbsp olive oil 3 Tbsp lime juice 1 tsp ground cumin ¼ tsp pepper ½ tsp salt 1½ cups cooked orzo, rinsed and cooled 3 cups fresh spinach, chopped Mix all ingredients except spinach in a large bowl. Let stand at room temperature for 1 hour to blend flavors. Stir in spinach before serving. 8 servings, each serving has 217 calories, 6g fat, 32g carbohydrate, 8g protein, 5g fiber
