Beets & Onions
5 medium beets, peeled & sliced
1/4 cup diced onion
1/4 tsp salt
1/8 tsp pepper
2 Tbsp olive oil
1/2 cup red wine vinegar
Place beets in a saucepan and cover with water. Bring to a boil. Reduce heat. Cover and simmer for 10-12 minutes or until tender. Drain. Place in a glass bowl and sprinkle with salt and pepper. Pour oil and vinegar over the top and toss to coat. Serve warm or cover and place in refrigerator until ready, stirring occasionally.
