Submitted By The Sensible Cook 1 can (15 oz) black beans, rinsed and drained 1 can (15 oz) yellow corn, drained 1/3 cup diced onion 1/2 cup diced red or green pepper 3 - 4 Tbsp minced fresh cilantro 2 Tbsp olive oil 2 Tbsp red wine vinegar 1/2 tsp salt 1/4 tsp pepper

1 can (15 oz) diced beets, rinsed and well drained
In large bowl, toss to combine all of the ingredients. Cover and refrigerate for at least 2 hours.
